Rau muong xao thit

Ingredients
  • rau muong
  • thin sliced beef
  • fish sauce
  • minced garlic
  • chopped onions
  • oil
Directions
  1.  Add oil to pan. Add garlic, onions and beef and stir until meat is cooked.
  2. Transfer meat to bowl, set aside. Add in rau muong and stir in pan until vegetable looks wilted.
  3. Add back in the beef. Add fish sauce and garlic to taste.
  4. Stir 7-10 minutes.

Stir fry tofu with lemongrass

Ingredients
  • thin chopped lemongrass
  • chopped green onions
  • oil
  • tofu
  • fish sauce
Directions
  1. Add oil to pan. Add onions and lemongrass to pan and stir.
  2. Add in tofu and fish sauce and stir 10 minutes.

Alex is 3 months old!


My adorable baby boy is growing so fast! So fast that he could barely fit into his blazer for his monthly picture. I found this Baby GAP blazer at a thrift store for $3! I kept saving it for when he could finally fit into it or for a special occasion and now I waited too long that this is sadly the only time he will get to wear it! But atleast I got some cute photos from it!

At 3 months, he is babbling a lot more and louder as well! I love to hear him 'talk'. He has also started playing with his hands, putting them in his mouth and grabbing/pulling things (like my hair!). I can also see two tiny teethes starting to appear on his lower front gum line, which I assume is causing his to drool like crazy! He is very playful and active little baby!

Two months scrapbook page

My son is turning 3 months next week and I've just now finished with his 2 months scrapbook page. I've been a little behind. I thought I could work on his pages while he naps but I find myself doing other stuff like cleaning, organizing his stuff, catching up on blogs etc. I still have his cookie monster page to complete and will post that when I'm satisfied with it.

For this 2 months page, I went with a Charlie Brown theme since it's what he wore the day I took his picture. I love that shirt on him. I found it at a thrift store while I was pregnant. I took those photos during his 2 month checkup visit. He had to get his first set of shots that day. Poor baby. He developed a fever hours after we left the doctor. However infant Tylenol and a heating pad on his legs helped him get through it.

I was able to find the Peanuts embellishments on eBay for way cheaper than at the craft stores. Thank goodness for eBay. The clouds and grass were hand cut by me!

Ultrasound page

I finally had time to put together the ultrasound page for my son's scrapbook. Ultrasound appointments were my favorite OB visits during pregnancy. Every ultrasound visit was filled with so many feelings...anxious, excited and impatience! The first ultrasound was at 13 weeks. I remember being able to see his tiny legs moving fast on the screen! I was unable to get any sleep the night before the 2nd ultrasound. I was 20 weeks pregnant and that was the appointment where we would find out the baby's gender! I was up all night, tossing and turning. My gut feeling told me I was having a boy. I can't explain how I knew, but I just knew. His ultrasound photos were incredible--his face structure was outlined so clearly. The 3rd ultrasound was at 33 weeks and honestly, I had no clue what the pics were of. He was measuring big and I know it's cramped in the womb already so I was just happy that he was growing normally.

Alex's First Christmas Scrapbook Page

This is Alex's scrapbook page for his first Christmas! He was a bit colicky that night but was able to sit and watch his cousins open their presents. He received a lot of gifts as well. I made this page to add to his scrapbook. I still have to write a few things on it (hence the blank area on the right) so that when he's older, he can read about his first Christmas.

I was able to find the red tinsel that I used to frame the photo, the leaves with red ribbon and bells and the glittery red alphabet stickers at Marshall's for really cheap! The Christmas lights trim and Santa embellishments were purchased on eBay (by Jolee's Boutique) -I like buying scrapbook materials there because usually it's much more cheaper than at craft stores like Micheal's and Hobby Lobby.
